Urban Cookhouse was founded in Alabama and is currently one of the larger emerging chains in the Southeast. They have a commitment to “Buy local,eat urban”. They offer items such as sandwiches, salads, wraps, and specialty plates. The restaurant works with local producers, host an annual farmers market at each location, and freshly grill its proteins with locally sourced hickory wood and charcoal. They currently have 13 locations around South Carolina, Alabama, Tennessee, and Georgia.
Evergreens was founded in Seattle by Todd, Hunter, and Ryan. They had the aim to provide healthy, convenient, and fully-satisfying meal options in a fun environment for those who find themselves always on-the-go. Evergreens specialize in Salads, wraps, and bowls. They have several vegetables, fruits, cheeses, proteins, dressings, and premium items that you can choose from to customize your dish. Evergreens has 8 locations in Washington and plans to expand several more locations in Pioneer Square, Kirkland, SeaTac, and Publix.
Cafe Yumm! was founded by Mark and Mary Ann Beauchamp who have created a casual dining experience. In 2015, Cafe Yumm! became Oregon’s first Benefit Company with a “triple bottom line” including environmental and social considerations. There are currently 21 locations around Oregon and Washington.
Asian Box was inspired after the Asian street stalls. The proprietors purchased everything they needed fresh for the day and pushed their carts to market with the day’s bounty. They would sell everything they made fresh each day and start again tomorrow. They specialize in creating fresh food with the made-to-order experience in an authentic, healthy way. There are currently 10 locations around Palo Alto, Mountain View, San Jose, Los Angeles, Santa Monica, and Irvine.
Velvet Taco was created by Dallas-based Front Burner Restaurants in 2016. It was founded on the idea that tacos don’t have to be associated with Tex-Mex cuisine and can be made with the same quality ingredients as fine dining. Velvet tacos makes their own tortillas, slow roasts their chicken and corn, and makes everything from scratch. They currently have 6 locations in Austin, Dallas, and Houston, Texas.
Tocabe was inspired by Ben Jacob’s family restaurant along with business partner Matt Chandra, who hoped to introduce a new (old) cuisine into Colorado’s fast-casual melting pot. They opened their first location in 2008. Tocabe offers fresh, clean-label, local, and responsibly sourced ingredients in dishes like Indian tacos and stuffed breads. They currently have 2 locations in Colorado and are expecting to build a new location in late 2018.

Next Level Burger was founded by Matt de Gruyter with the ambition of having 1,000 units in 10 years. Next Level Burger claims to be America’s first 100% plant-based burger joint. Next Level Burger specializes in Burger, Fries, and shakes that are 100% plant-based. They currently have 6 locations around California, Oregon, Washington and New York.
Cheba Hut Toasted Subs
Cheba Hut was created in 1998 by Scott Jennings. The menu features over 30 signature sub sandwiches, as well as a variety of Rice Krispy treats, salads and multiple munchies. Most locations also offer craft beer bars from the local breweries. They currently have 20 locations in Arizona, Colorado, California, Oregon, New Mexico, and Wisconsin.
Bellagreen is a restaurant that offers a down-to-earth eating experience where guest can enjoy chef-quality food classics. They are an eco-conscious restaurant and also accommodate different dietary needs so each individual can enjoy finer dining at an affordable price. Bellagreen’s menu consists of salads, soups, tacos, pizza, paninis and wraps, sandwiches, burgers, and pasta. They currently have 6 locations around Houston, Sugarland, and Woodland, Texas.
Roti Modern Mediterranean
Roti Modern Mediterranean was founded in 2007 and opened 10 restaurants in 2017. They created Roti to share their love of the Mediterranean flavors, wholesome ingredients, and spices. The Mediterranean diet has sustained people for centuries with their rich vegetables, olive oil, wholesome grains, and lean protein. They currently have 33 locations in Illinois, Washington, DC, Virginia, New York, Texas, and Minnesota.
Dat Dog was first founded in 2011 in a 475 sq. ft. shack in a post-Katrina New Orleans neighborhood. They combine the soul of Louisiana with the sophistication of Europe, Dat Dog’s artfully crafted cuisine of Hot Dogs, sausages, burgers, and chicken. Dat Dog offers over 30 toppings available at no extra charge that allows you to create your own “jazz improvisation in a bun.” They currently have 5 locations in New Orleans.
Dizengoff was founded by Beard Award-winning Michael Solomonov and Steve Cook who opened the Israeli fine-dining restaurant in Philadelphia in 2008. Dizengoff is a fast-casual hummus concept that arrived in the summer of 2014. the main focus of the restaurant is their freshly made hummus topped with rotating seasonal garnishes, like hot spiced lamb with pine nuts or avocado. They currently have 4 locations in Philadelphia, New York, and Miami.
Grandpa Mac was created by two brothers, Orion and Hari Cameron. They wanted to create a concept that was affordable and offer something for everyone that loves pasta. Cameron McCurdy was the Great Grandfather of the two brothers who founded grandpa (MAC). They both thought the best way to honor his memory was to name the restaurant after him. They specialize in pasta and have many options to choose from to customize your own pasta dish. Grandpa Mac currently has 2 locations in Delaware and hope to further expand.
